Paint or not to paint… meatless Monday recipe

Hey all,

Hope everyone is doing well…. so …. I need some opinions please…. I have these two lovely nightstands…. in major need of an overhaul… one I believe is solid Cherry wood … the other …. solid maple?  Anyhoo…  I have been contemplating whether to paint them once I strip off all the goo and damage and sand them down …or leave them in their natural state…

If I paint … any color suggestions? 

I was thinking…..  mmmm… perhaps a lovely grey?  white?  french bleu?    Or simply leave the wood sanded as is…???

SO …. whatya think? ….  Doooo tell …

Ok so… on to my meatless Monday recipe…. I will only do these on occassion so at not to bore anyone with just meatless Monday posts….  I am also looking for recipes …  If anyone has one they want to share I will do a link back to their blog…

LEEK CORN AND POTATO SOUP

Put cloves of garlic .. … and shallots in pan with olive oil… I am not going to measure this out because I love a ton of garlic.. others may want less…  and brown

Then add potatoes and corn …   MOL to carmalize …. I think this adds a nice flavor with the browned bits….  some people actually roast their potatoes first…. which is fab if you are not in a hurry …   for a quickie though this is a great way to do it…. season to taste….

Once done add chicken stock ….  leeks  …….   and touch of butter

Cook until potatoes  are tender and soft …. then take a potato masher and mash….  some… not all …….of the potatoes …. this gives it a nice consistency …. thickness….. to the stock ….  (some people blend their soup at this point )  just depends on whether you want a big pot of really thick soup or a nice base with lots of veggies in it…

Then serve with or without parmesean cheese… 

Yumm and yummmmmmm!!!

Meatless Mondays

Hi All,

Been a while… I know… been  …. well just been…  anyhow…  I am back … and today I have decicided to join the ranks of a new movement called Meatless Mondays…

What you say is a Meatless Monday?  Well it all started actually during World Wars I and II when the government encouraged people to ration or eliminate meat at least once a week to save money …So  Oprah ….. author Micheal Pollen …..  Johns Hopkins Bloomberg School of Public Health and Meatless Mondays a non profit originator of Meatless Mondays have decided to start this movement… 

The idea is quite simple… eliminate meat on Mondays… 

They have a fabulous website (link at end of post) with loads of recipes and a bigger explanation of the whole campaign… which basically is to eliminate at least 15% consumption of meat from the diet to promote healthy living and the health of the planet…..  this they say also helps to start your week out on a better level should you over indulge during the weekend…  

I rather like the idea …. I have noticed that I do better when I eat less meat…have more energy …  in a better mood…. now I have a goal to stick to … which then in turn starts the ball rolling for me to eat healthier because as I feel better I dont seem to want to put so much of the unhealthy foods back on my plate… and there are so many other ways to get protein besides meat… by the way this includes eliminating fish and chicken too… 

Ok ok… …. this does not mean I dont like meat ( so meat lovers do not despair) …  I love a good steak ….  had a filet last night stuffed with a cream cheese and butter mixture and herbs (my recipe) ….  along wih broiled crab leg…. my Valentine treat for myself….. just means I am trying to do what I can to make a healthier lifestyle for myself…..

So here is an old standby recipe… that I truly love….  there are so many possibilities as to what you can add to the mix:

Cut up…equal amounts of eggplant…yukon gold potatoes….tomatoes… zucchini….turnips….onions…..lots of whole garlic cloves …. basically any veggie of your choosing… place in a roasting pan….lightly coat with EVOO and pepper… or whatever seasonings you desire…. throw in some fresh basil and a sprig of rosmary… roast in the oven at 425 degrees 1 hour or until golden brown… top with freshly grated parmesean cheese….delish

Now I have to tell you…  I am so excited too because I actually won a giveaway!  Yes… my friend KJ of …  www.eye-dyllic.blogspot.com   is a pampered chef representative and she had a giveaway a while back….  I rarely play along because I usually never win but I did this time and I got the best prize!   A pizza stone with handles!  How neat is that?  Great way to incoporate veggie pizza to my Meatless Mondays! 

PS ignore that ugly green cabinet…. I rent and am toying with the idea of painting …however my landlord doesnt give me a discount for improvements so its something I may have to live with for now…

BUONE NATALE

Hello Dear Friends,

Well another year will soon be over…. we will be starting with a clean slate …. working towards new goals… new creations…. new memories to cherish… …

 The year for me has been one  filled with many trials and tribulations….. much happiness … extreme sadness…  especially the past couple months with the loss of my younger sister…. however… with that pain there has been tremendous growth and learning experiences…

I have learned that life is too short and we must take each memory …. each day …. grab onto it and dont let go …. I have saved many things for a rainy day… no longer…  I have been one of those people who only takes out the good china when it’s a holiday….  I have come to realize there may not be a tomorrow ……  one in which to enjoy that china….  or drink out of the crystal goblets….I have learned not to take things for granted …. a fault I think we may all be guilty of to some extent…. I have been trying not to dwell on the past… but rather move forward and live life as best I can…. to let the little things go by the wayside …..  there has been a profound change in me….  there is emptiness… but there is also peace….  truly not something I can explain….  and there has been many many tears …. some yet to come… no doubt…   

The New Year will bring…. for me …..many pieces of the past …..into my beginning  …… things that I still have to deal with for now… but it will also bring renewed hope that the goals I have worked so hard to achieve will finally come to fruition….  one being my boutique which has been at a standstill for a while but one that hopefully will become a reality in the distant future….

I want to say thank you … to all the wonderful blogging friends who have been my rocks… my leaning posts through some tough times…   many whom I have written to when my heart has been aching …. they have never judged … only listened  when I needed a shoulder to cry on …. and others who have been there and been with me from day one of my writing  experience to lift me up and show their support….

I lift those crystal goblets in a  toast to the people who have made a profound difference in my life…

May your days be merry and bright…. may the New Year bring you much happiness,  peace,  and love ….

HAPPY BIRTHDAY DEAR SISTER

November 6th, 2009

Today….. November 6 ….. would have been your birthday…. you loved them…. you always came down to celebrate together since we were born in the same month…  I shall miss the family dinners at our favorite restaurants and the laughter and fun we would all have together…

The days have gotten longer it seems …… as I notice things that I want to do or say … such as pick up the phone to tell you about something that has happened…. something that I know you would love to hear about ….   its hard ….  I cry right now at the drop of a button and  I get angry with you for leaving me…. thats the worst part…. 

We finally brought all your belongings here to go through….

Its amazing what secrets we find about someone we love after they are gone…. its like learning all over….. about you…. finding things you cherished in little boxes… all the cards you saved …. the momentos…  the dried flowers…. and sad things that happened in your life that you told no one about …. things that you wrote about in your journals that had you told me….. would have made your life easier….  it breaks my heart…. but I cant fix it now…

Grief …. it is something that no one wants to feel yet we have to allow ourselves to experience in order to move forward….

Just know …. that I miss you terribly…. even the not so good times when we didnt always get along….  because I always knew you were there… even then… and knew I was loved … as I loved you…

A BIG OOPS

While some maintenance was being done on my website … the two posts below concerning my sister were unfortunately … deleted…

I managed to get them back up and my programmer is going to post the comments that he saved…. however,  there may be some that are lost….  please check back in a few days and see if your comment is on there….if not …let me know … or repost your comment if you would ….

Your support has meant a lot to me …. and I would love to print them out and make a small booklet to read when times get a bit tough…

MY SISTER TOO

October 21st, 2009

The grieving process has been a difficult one….  mostly disbelief that one you love is gone…. anger… it has been strong … not wanting my sister to leave me so soon has taken so much out of me…

Facing the reality…. its not so good….

I am not sure it has hit me quite yet…   the pain is unbearable though …. when at times it does sink in….. knowing that she wont be coming back… wont walk in the door… wont smile at me or hug me…  watching as life goes on …..  realizing you have to go on with it  … not wanting to …..

My sister was well loved as was apparent by the friends that stopped in to say goodbye …

We will release her ashes in the ocean on her birthday weekend in November ….  we will throw her one hell of a party and send her around the world with smiles and laughter and tears…. as it should be… those who loved her most will be with her…

I am closing this post with some beautiful quotes that I found in some of my sisters belongings…  there are many and I will share them from time to time with my friends ….  I thank all of you for being there for me … for bringing me comfort during such a difficult time……  it has been so appreciated

MY HEART IS BROKEN

Today …… October 6 …..my younger sister passed away ….though she has had health issues this was very unexpected  …. it has been devastating ….. I am  posting about this because when one is hurting we tend to seek those who bring us comfort…

THE KINDNESS OF STRANGERS….

I had a different post planned for today …. one about my garden and a painting I just finished ….however when I read this story …. I had to share ….its a feel good … wow of a story that will truly touch your heart…

  

Do you believe in canine guardian angels and the kindness of strangers? You just might after reading this story.

Early one morning, Yolanda Segovia’s neighbor, Stacey Savige, knocked on her door and asked her to temporarily take in a stray dog she had found. The scruffy terrier mix had no collar or microchip. Segovia eyed the pooch — burrs sticking to his belly and mud caking his fur — and reluctantly agreed to foster him for the day.

An erstwhile hairdresser, Segovia hasn’t worked since 2006. At 47, she is a survivor of breast cancer and cervical cancer. A divorced single mother of two, Segovia shares her Port Tampa, Florida home with her 10 year-old son Azaiah and 21 year-old son Christian. Her elder son has Down Syndrome; he cannot speak or bathe himself, and he has had heart surgery and a kidney transplant, reports the St. Petersburg Times.

Azaiah immediately took to the dog, whom he named RaeLee (pronounced “Riley”). Segovia and her sons bought the dog a collar, leash, ball and brown bed from the dollar store, and all that day, Azaiah played with the dog, laughing gleefully whenever RaeLee licked his face. “Don’t fall in love with him,” Segovia warned.

Segovia and Savige made 4,000 FOUND flyers with the dog’s picture, stuffed mailboxes and put an ad on Craigslist. When no one called, RaeLee stayed the night at the Segovias’ house. His dog bed was placed in the living room, but when the boys climbed into their twin beds, RaeLee dragged his bed down the long hallway and bunked with the boys in their room.

By Saturday — four days later — no one had called to claim RaeLee, and he was still living with the Segovias. The honey-colored terrier had started responding to his new name. He almost never barked, loved playing rambunctiously with Azaiah, and was tender with Christian.

One afternoon, the dog settled himself on the floor near Christian as he watched a “Barney” video in his room. Segovia was outside watering the plants when the placid moment was shattered by the sound of RaeLee crashing into the screen door and barking crazily. Alarmed, Segovia opened the door, only to have the dog race back through the house towards the boys’ room. Segovia followed, screaming when she caught sight of her son. Christian was “slumped over, his body writhing in a seizure, blood streaming from his nose and mouth.” RaeLee stood next to him yelping, but suddenly went quiet when Yolanda reached down to hold her son.

“If he hadn’t come to get me,” Segovia said, “the neurologist said Christian would have choked on his own blood and died.” The dog, she decided, was a keeper.

But the next day, Segovia and her sons were heartbroken when someone called to claim the dog they had come to love. Randy Cliff, 34, who lived six blocks away said he had been searching for his dog — real name Odie — for over a week. Odie had lived with Cliff, his wife, their four children and infant granddaughter. Savige cried, telling Cliff, “That dog saved my friend’s son.”

When Cliff came to collect his dog, RaeLee a.k.a. Odie, leapt off the Segovias’ porch and into his arms. Christian watched from a window. Azaiah stood on the porch watching the man hug the dog he knew as RaeLee. “We’re going to miss you,” he said, tearfully.

Looking up, Cliff took in the scene — Christian looking scared, Azaiah looking downtrodden — and asked, “Is that your brother?” Azaiah nodded yes.

With a sudden change of heart, Cliff put the dog back down. “Maybe Odie was supposed to find you,” Cliff told a stunned and delighted Azaiah. “Maybe you should keep him.”

And that is how the kindness of strangers — Savige for rescuing a lost dog, Segovia for taking him in, and Cliff for giving up his pet to a pair of brothers who needed the dog more — brought RaeLee to live with Azaiah, Christian and their mother

I am such a sap for a story like this….¬† tears anyone?

I dont know how many of you are watching Americas Got Talent….¬†but I have been glued to my set on Tuesdays and Wednesdays while trying to sew ….needless to say … I havent gotten much sewing done…with good reason…..¬†¬†I¬†must say I have never seen more creative ….. amazing…. inspiring¬†……. extremely¬†talented¬†people in my¬†life…. many who brought tears to my eyes…. some with extraordinary stories….

There is the guy from KY whose looks belie his singing voice in that you would never imagine the¬†heavenly way he sang….the 60 something woman who¬†always wanted to dance and by golly she did¬† …¬† the 75 year old grandma with a humorous side…. the guys from Richmond, VA with ages ranging from to 60 on down whose harmonies will melt your heart…the¬†beautiful mother who survived cancer to fullfill her dream of singing…. and the lovely young lady from last night who applied for a job on a cruise ship only to be shot down because of her looks (she has scars on her face) …. she was rejected because they couldnt get past them¬†…. wow can she belt out a tune!!!

All the above made it to the finals in Las Vegas ….¬† there are so many more who are just as talented and just as phenomenal¬† (I couldnt name them all …the ones I did are just a small sampling ) …. and I know I sound like a commercial for this show but seriously if you get a chance …. cop a squat and watch an¬†hour of pure entertainment¬†that will keep you completely glued to your seat for the duration….. then watch the¬†elimination process that leads up to the Grande Finale¬†in Vegas starting next week…. oh yes…. they usually have a repeat of the show from the night before an hour ahead of the current one… so if you wish to see last nights show and the young lady I was talking about …. then tune in tonight at 8 pm EST with the current show to follow¬†at 9¬†¬†EST…. for those not in Eastern time slot of course check your local listings ….

And ……for those who may be interested…. the lovely singer that captured our hearts from Britains got talent¬†¬† ….. none other than Susan Boyle….. is going to appear some time tonight¬†on the show at¬†9 pm¬†¬†EST….

Ok… so I know you are saying… why…why is she writing about this?¬† well… one of the main reasons is to instill a bit of the positive¬†¬†¬† …….¬† I know this is going to sound a bit sappy but¬†¬† ….¬† all of these people had a dream… many were shot down but did not give up … and they are persuing that dream…¬† to make it as far as they have…. well thats an accomplishment ….. so …. if one needs to be inspired…. if one needs a little shove in the right direction…. I believe this¬†program is one that shows you that there are people who believe in themselves ….. who didnt give up¬†…….. and with a lot of encouragement can make it…. that goes for all of us with our dreams too…. no matter how tough things might get…..¬† keep that dream alive…. it does work….

Watch the show you wont regret it…
